Asparagras Soup
Take Bieff mutton & veall & make good broth
take some asparagrass & blanch it & cut it in
about ane inch long & when your broth is
well boyld strain it off & put you sparagras
in a litle pot with a chicken & put as much
of the broth to it as will boyl it sock some
crust of bread & lay in the botton of the Dish
& put in your broth & the sparagras that
you haue boyld with the chicken in the midle
of the Dish, boyle as much fine bacon in the
same broth as will garnish your Dish puting
fine slices of bread or crust round the run of
the dish for to keep the bacon from going into
the soup
Turnep Soup
Make good broth puting 2 carets 2 turnips ane union
4 cloves take a good many turnips cut them in four
4 square pieces about ane inch bigness, put them
in a litle pot with some of the broth & a litle gravie
to give your soup a Colour & boyl them with a Duck, strain out your
broth sock some bread & power your broth ouer it &
Let your Duck in the midle & power your Turnips
ouer it & serue it up
