sure they haue sound corne, and when thee henns laye
take there egs euery daye and keep them in oates till you
haue .18. egs, then sett them vnder a house henn: and
a daye after they be hatched feed them with andts egs
and sometimes with curds, & sometimes with oate=meale
gritts, and keep the henn in a coope that shee doe not
eate there meate from them but giue her other meate,
you must in treading time feed them with hard egs
chopped both whites and yealks: some .2 egs a daye will

To make Leamon Creame.
Take a quart of creame boiled, then take some egs
beate them very well when the creames boiles put them
in and let them haue one boile but keep it stiring one
waye for feare of curdlinge, then take it from the fier
and keep it stiring till it be almoste colde, then take a
leamon and squeese in it stiring it while it is puting in, then
sweeten it with sugar to your taiste, if you please you
maye put in the crums of browne bread for it giues a
good taiste, so put it into the thinge you serue it vp in
and let it stand till it be colde
To make a Heghogge.
Put a pinte of creame into a skillett, & 2. egs well
beaten, & .2. spoonefulls of sower creame put them alto=
