Take twelve pounds and half of Lisbon
sugar, three gallons and half of water
(ale measure) boil them together while
any scum arises, then put it in a tub
to cool; add one gallon of ale wort from
the vat when at the h. height of work
-ing - letting it work the usual time
of ale - tun it, and add two pounds of
raisins, half a pound of sugar candy
one ounce of isinglass and a pint of
brandy - let it remain unstopped
till it has done working - when it has
been in the barrel one year, bottle it,
at the same time a pint of brandy
more by putting a little into each
bottle - Mrs Haimes.
To make Excellent Vinegar
Boil one Pound of Coarse Sugar in one Gallon of
Water for ten minutes; After skimming Put it
into a cooler, and when new milk warm, put a
toast with Yeast into it. Let it stand four days, then
pour it into Cask which must be slightly bunged
and exposed as much as possible to the Sun In
about 3 months it will be fit for Use -

To make India Pickle.
Thicken 1 Gallon of Vinegar with 1/4 pound of
Mustard, boil it and put in 2 oz Ginger 2 Ditto
white Pepper corns, 4 ditto of Mustard seeds
4 or 5 Capsicombs, 1/2 oz Cloves, 2 large roots
of Horse Raddish. -
Boil a little salt and vinegar and let
what you intend to pickle lie in at a
day or two, then put it in the above
Pickle - - Turnips, Cauliflowers, and
Cabbage, only require a little salt

Marking Ink
Mix together in a Phial 100 Grains of Lunar Caustic
2 drams of gum arabic 1 scruple of sap green and one
ounce of rain water the linen must be wetted in
the following liquid and dry'd in the sun before it is written
upon
one ounce of Sal Soda dissolved in two ounces of rain
water.
